Toddler Salad

My two-year-old loves salad.  Not lying.  Not kidding.  The lettuce is a little hard for him, so we have to cut it up well, but last night, his salad had red bell pepper, onion, tomato, lettuce, avocado, cucumber and a touch of Italian dressing.  Oh, please, at this point do not lecture me on how salad dressing is not good for you, because you can make it healthier:
1. Give up on the blue cheese (unless the occasional fresh crumbles, which are too wonderful to quit!), ranch, 1000 Calorie....I mean Island.
2.  Two words: Newman's Own (it is really good and proceeds go to charity).  You do not even have to get their low cal or low fat, but simply choose an oil/vinegar base.
3.  Before you use the dressing, pour all but about 3/4 of an inch of oil out and save it for cooking (you want to leave some oil as it helps the body with absorbing nutrients).
4.  Make a salad for your whole family and pour the dressing on five minute prior to serving.  Finally,cut and mix the salad well, as this will allow you to use less dressing, yet still have an even, light layer on the entire thing.
With those steps, you have given to others and yourself, as you just ate a sharper tasting salad with far fewer calories.
